January Aspire - Atlanta, GA

 Sunday, January 5

The first week of January is flying by!  Enjoying my Bible reading with my new mug from Addie.  It is heated!  Isn't that cool?  I hate when my coffee grows cold and this is perfect!  Plus it is my favorite color!  So cheery.

Connection groups and church.  Addie and I left immediately after church.  She had to be back to the college by that evening.  The rest of the day was driving to Pensacola and back again.  Driving there is no biggie.  It is driving back that is the killer.  But God helped me make it safely!

For the evening, Sierra and Summer had a youth bonfire activity on a farm.  How fun!

Monday, January 6

Eric and I left for Atlanta at 6:30am.  We were headed for our first Aspire event for 2025.

Autumn said Nugget must miss me because she decided to hang out on her bed with her. :)

Autumn and Summer were asked to work at Andrew's house to put away all their Christmas decor.  They worked there and also at the Collective Influence office Monday - Wednesday.

Our Aspire event went well.  Susan and Anna took me to a place called The Varsity that is a popular place in the Atlanta area.  I enjoyed it very much!

Day of event - Atlanta, GA

The one thing I hate so much when I work these events is missing being outside and the sunshine.  We are inside all day and I just crave to be out in that sunshine!

Looks like we are getting out of Atlanta just in time before a storm comes through!

Beautiful days in Florida!

Thursday, January 9

I rode home with a few other employees on Thursday morning.  Eric flew out to DC from Atlanta.  I am always glad to be back in my home!
Thursday evening, we went to the girls' AHG meeting.  They participated in the opening and closing ceremony.

Happy 45th Birthday, Eric!

Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
