This was the sun finally peeking its way through the trees Thursday morning around 8:15am. Beautiful!
For breakfast, I (of course) tried another new recipe to me...Omelettes in a Bag! This was definitely a recipe to do every time camping.
Omelettes in a Bag
2-3 eggs per bag
Whatever toppings you like in your omelet
Diced ham, potatoes, sausage, mushrooms, green/red peppers, tomatoes, shredded cheese, onions, etc.
Make sure the air is out of the bag. Seal. Squish the eggs until all mixed through. Place bags in boiling water for 10-12 minutes.
When done, simply slide out of the bag onto a plate and serve!
I placed the baggie into a coffee cup while putting in the ingredients to make it a little easier.
I used a freezer Ziploc bag.
Write names on the bag so you know whose is whose! :)
The great thing is they were done all at the same time - ready to eat as a family. :)
After breakfast, we went back to the Visitor Center to read up a little more on the area and get a postcards and souvenirs.
Then we went to Loleta, CA to the Loleta Cheese Factory. We were hoping to take a tour but they weren't making cheese that day. So we bought some cheese and garlic stuffed green olives. Oh my goodness...SO GOOD!
Then we went to the back of the store where they had a beautiful garden area. They had a scavenger hunt for the girls which they loved! They had so much fun. :)
I couldn't stop taking photos of all the beautiful flowers!
Then we had lunch at a Wendy's - I had a delicious apple chicken salad and then headed to Trinidad Beach.
Northern California beaches are so beautiful!
Many of the large rocks were just covered in mussels.
We enjoyed a stroll down the beach exploring the rocks looking for shells and treasures.
Very interesting!

Then it was back for a late night at the campsite...cheddar brats for us, hot links for the hubby and cinnamon rolls toasted over the fire. Yum, yum.
Good times, good memories.
