Summer Menu for Hosting Friends-Shredded Pork Sandwiches and More!

Last night, we hosted a meal at our home - total of 15 people.  I thought I would share a run down of the meal with you.  
Papa Vern brought me a beautiful vase of my favorite flowers to the meal!


The temps in Reno hit 102 yesterday and we don't have AC so I wanted to make a meal using mainly crock pots and cold items.  
Crock pots are also wonderful eliminating last minute cooking and dirty dishes when company is arriving.

I had an 8 lb. pork loin that someone had given us.  I used half (4 lbs) for this recipe.  *Note this recipe is for 1 lb. so you will need to increase the sauce amounts.


Shredded Pork Sandwiches

1 cup ketchup
2 tbsp. and 1 1/2 tsp. brown sugar
2 tbsp. and 1 1/2 tsp. worcestershire sauce
1 tbsp. spicy brown mustard
1/4 tsp. pepper
1 lb. pork tenderloin

Cook on low for 5 hours in your crock pot.  Shred and mix thoroughly so all meat is coated with the sauce.

Serve on hamburger buns with a side of dill pickle spears.

For sides, I served Creamy Italian Pasta Salad.  This time, I used the Betty Crocker Suddenly Salad box pasta. 


I also served Hash Brown Casserole.  I like it better baked but I did cook in a crock pot to cut down on heat in the house this time.


Hash Brown Casserole

2 cans (10 3/4 oz. each) cream of potato soup (I do use cream of mushroom as well.)
1 cup (8 oz.) sour cream
1/2 tsp. garlic salt
1 package (2 lbs.) frozen cubed hash brown potatoes
2 cups (8 oz.) shredded cheddar cheese
1/2 cup grated Parmesan cheese

Combine soup, sour cream, garlic salt in a large bowl.  Add potatoes and cheddar cheese.  Mix well.  Pour into a greased 9x13 dish or in your crock pot.  Top with parmesan. Bake, uncovered at 350 for 55-60 min or 2 1/2 hours on low in your crock pot.

As a vegetable, I served corn on the cob.  Yum!  A large stock pot is the best for boiling large amounts of corn.  I use these for sticks of butter to place on the table.  $1 at the Dollar Tree. :)


Drinks:  Sweet tea, water, or Wild Cherry Pepsi.  I always make two pitchers of sweet tea for company.  These goblets were given to me and they are perfect for company!  I keep them stored in the original box in my buffet.


For dessert:  Peanut butter cookie sundaes.  Top a peanut butter cookie with cookies and cream ice cream. Drizzle with chocolate syrup.  

Always serve coffee!  There is something that ends a great meal perfectly and that is a cup of coffee.  This time it was Dunkin Donuts Hazelnut coffee with french vanilla creamer.

You May Abound In Hope

Today I completed a devotional book by Candace Cameron Bure.  100 Days of Joy and Strength.  I was struggling last night.  Darkness seemed to overwhelm me.  The last day of this devotional gave me exactly the encouragement I needed to go another day. Here are the verses she shared from God's Word. "I wait for the Lord, my whole being waits, and in His word I put my hope."  Psalm 130:5 "We are afflicted in every way, but not crushed; perplexed, but not driven to despair; persecuted, but not forsaken; struck down, but not destroyed;"  II Corinthians 4:8-9 "As for me, I watch in hope for the Lord, I wait for God my Savior; my God will hear me.  Do not gloat over me, my enemy!  Though I have fallen, I will rise.  Though I sit in darkness, the Lord will be my light."  Micah 7:7-8 "I remain confident of this; I will see the goodness of the Lord in the land of the living.  Wait for the Lord; be strong and take heart and wait for the Lord."  Psalm 27

Ten Tips for Sunday School Teachers

Ideas for Sunday School Teachers: 1.  Write a note to each student and mail it to their home. 2.  Visit the child in his home and bring a small treat. 3.  Make a special treat once a month for your students on Sunday. 4.  Have a Sunday School class activity on a Saturday or Sunday afternoon. 5.  Pray for your students. 6.  Have a monthly or quarterly contest for your students.  Include bringing their Bible, saying memory verses, attendance, etc.  Award small prizes. 7.  Have a special craft once a month. 8.  Rev up your teaching time!  Use props such as costumes, pictures, videos.  Make your lesson time come alive.  Teach your lesson 2-3 times during the week out loud – you will be amazed at how you will be able to teach it to your students – not just following the words in the book. 9.  After the lesson, be creative!  Students should not just be sitting and waiting for Sunday School hour to end.  You have 45 minutes each week to impact that little life.  Make e
