Cheese Soup
This is a recipe from Abeka's Family Consumer Science class. It is a good soup with a sandwich for a delicious lunch.
1/4 cup onion, chopped
1/2 cup celery, chopped
1/4 cup carrots, chopped
3 tbsp. butter
3 tbsp. all-purpose flour
1/2 tsp. black pepper
pinch cayenne pepper
1 cup water
2 cups milk
1 1/2 tsp. chicken bouillon granules
1 cup grated cheddar cheese
In a 2 qt. saucepan, melt butter over low - medium heat. Add vegetables and saute 3 min. or until tender.
Remove from heat; stir in flour, black pepper and cayenne pepper until smooth. Return to heat and cook mixture until it has bubbled for 2 min.
Stir in water, milk and bouillon granules. Bring to a boil. Boil for 1 min., stirring constantly.
Reduce heat, add cheese. Stir until cheese is melted.
Garnish servings with paprika or fresh parsley.
