There are some things you wonder why it took you so long to try to make. Cream of mushroom soup is one of them. :) Forget Campbell's - try this!
Cream of Mushroom Soup
4 tbsp. butter
2 lbs. sliced mushrooms
1/2 cup chopped onion
8 tbsp. all-purpose flour
1/2 tsp. salt
1/4 tsp. pepper
6 cups chicken broth
16 fl. oz. half-and-half cream (one container-almost 2 cups)
In a large saucepan, heat butter over medium-high heat; saute mushrooms and onions until tender.
Mix flour, salt, pepper, and 2 cups chicken broth until smooth; stir into mushroom mixture. Stir in the remaining chicken broth (4 cups). Bring to a boil; cook and stir until thickened, about 2 minutes. Reduce heat; stir in cream. Simmer, uncovered, until flavors are blended, about 15 minutes, stirring often.
***If you need a little more flavor - just sprinkle in a little more chicken granules to taste. It perks it right up!
