Christmas Recipe: Christmas Crack (Saltine Toffee Candy)

Baking at Christmas time is always a favorite activity of mine.  Here is a recipe to make to enjoy or give away this Christmas season.

Christmas Crack {AKA Saltine Toffee Candy}

Ingredients

  • 1 cup butter NOT margarine - the original recipe calls for unsalted butter but I've used both
  • 1 cup brown sugar
  • 1 1/2 cups semi-sweet chocolate chips
  • 40 saltine crackers

Instructions

  • Heat oven to 400.
  • Line 12x17 cookie sheet with foil and spray well with cooking spray.
  • Layer the saltine crackers on top of the foil.
  • Heat butter and sugar on the stovetop and heat until gently boiling, stirring constantly.
  • Reduce heat to low boiling and cook, uncovered, between 3 and 5 minutes until the mixture is thickened and sugar is dissolved. (Be careful to avoid burning the butter and sugar- that will ruin the recipe, but do make sure the sugar is dissolved and the mixture is thickening. This is by far the trickiest part of the recipe ~ just make sure it thickens and dissolves but does not burn.)
  • Pour the butter and sugar mixture over the crackers and spread evenly.
  • Bake for 5-6 minutes in the oven.
  • Remove pan from oven and let cool for 3 minutes, then sprinkle chocolate chips evenly over brown sugar mixture.
  • As chocolate chips melt, carefully spread them into an even layer over the toffee layer using a knife. (Note - I pop the pan back in the oven for about 20 seconds after sprinkling on chocolate chips so that they melt faster.)
  • Refrigerate for one hour.
  • Break into bite-sized pieces and serve. Store covered in refrigerator.

You May Abound In Hope

Today I completed a devotional book by Candace Cameron Bure.  100 Days of Joy and Strength.  I was struggling last night.  Darkness seemed to overwhelm me.  The last day of this devotional gave me exactly the encouragement I needed to go another day. Here are the verses she shared from God's Word. Ten Tips for Sunday School Teachers

Ideas for Sunday School Teachers: 1.  Write a note to each student and mail it to their home. 2.  Visit the child in his home and bring a small treat. 3.  Make a special treat once a month for your students on Sunday. 4.  Have a Sunday School class activity on a Saturday or Sunday afternoon. 5.  Pray for your students. 6.  Have a monthly or quarterly contest for your students.  Include bringing their Bible, saying memory verses, attendance, etc.  Award small prizes. 7.  Have a special craft once a month. 8.  Rev up your teaching time!  Use props such as costumes, pictures, videos.  Make your lesson time come alive.  Teach your lesson 2-3 times during the week out loud – you will be amazed at how you will be able to teach it to your students – not just following the words in the book. 9.  After the lesson, be creative!  Students should not just be sitting and waiting for Sunday School hour ...
